I spent this morning with a friend picking wild blackberries and blueberries. So yummy. After cleaning up the blueberries I started wondering what to do with them. Sure, I could just leave them in a container and pick at them but I was in the mood to bake. I could do muffins - everyone does muffins, I could do pancakes except I don't like pancakes. I was staring at the back of a Jiffy Baking Mix box and there it was - a recipe for banana bread. Surely I can modify the recipe slightly and come up with something not only edible but also tasty.
And I did. So here it is, a recipe made up by yours truly for truly tasty blueberry bread:
What you need:
1 1/2 c Blueberries
3/4 c sugar
1/4 c shortening
2 eggs
2 cups Jiffy baking mix
1/3 c orange juice
1 tsp vanilla extract
Preheat the oven to 350
Grease a 9 x 5 loaf pan
Cream the shortening and sugar together. Add remaining ingredients except blueberries. Mix until blended. Stir in blueberries. Pour batter into pan and let it bake for about 55 minutes.
Check the bread at 40 minutes by using a butter knife in the center. If the knife doesn't come out clean continue baking but checking every 5 minutes until a clean, knife comes out clean.
