I know, I know - there's lots of debate as to whether chili is still chili if it has beans in it. Here are my thoughts on the subject. I grew up on the east coast - Maryland to be exact and our chili always had beans in it and so my chili has beans - lots of them because I like them. So take that!
I always make my chili the day before I want to eat it simply because day old chili tastes so much better once the flavors have had a chance to mingle. I also like a lot of meat in my chili and I tend to eat it with a dollop of sour cream or some cheese. My simple chili recipe:
1 lb lean ground beef
1 can diced tomatoes
1 can green chilies
1 can tomato sauce
1 can dark red kidney beans
1 small onion chopped
1.5 tsp salt
1 tbs chili powder
1 tsp cayenne pepper
1 tsp cumin
That's it. Easy peasy and tastes good to me. Will serve 4 - 6 or one person like me for 4 days. Freezes well

I didn't know something without means counted as chilli as every chilli I've ever eaten has had either Red kidney or Pinto beans.
